May I recommend something I recently discovered - rattlesnake cheddar. It has tequila and habanero pepper blended into it. I'm not one that handles hot and spicy very well, but this stuff kicked butt flavor-wise.Clearly I'm not as fancy as you. I was picturing a hunk of sharp cheddar.

I brought some yak cheese back from Nepal, but I wouldn't recommend it. It's break your teeth hard, so you have to suck on it for and hour and then it has no flavor.I believe that's Stilton
